It seems that there are so many different types of salts these days to choose from. You might have thought that salt is just salt, but nothing could be further from the truth! Here is a basic guide to the different types of salt.

Table Salt and Iodized Table Salt

Sea Salt

This is the type of salt that most of us use at home and the type that we find on most restaurant tables. Our basic table salt is made by sending water into salt deposits then evaporating it - only the salt crystals will remain. The salt goes through a refining process that removes the other minerals from it. Table salt has a fine grain texture which makes it ideal for baking - it can accurately be measured. Iodine is not naturally in table salt - Morton Salt Company started adding it back in 1924 to decrease the chance of goiters. The majority of table salt is iodized in the United States these days, and, indeed, the occurrence of goiters has gone down greatly!

Kosher Salt

Kosher salt is made in a similar fashion to table salt - the difference is that kosher salt is raked during the evaporation process. This type of coarse salt is generally evaporated from brine. This creates grains with a block-structure, this structure better allows the salt crystals to absorb blood (Jewish law states that you must extract blood from meat before you consume it). Kosher salt is less salty than table salt.

Sea Salt

Sea salt is harvested by evaporation, also. Sea salt is not quite as salty as table salt is. You can find both fine grain and coarse grain sea salt. Many sea salts include trace minerals like potassium, magnesium, and iodine - these minerals are naturally present, not added.

Fleur De Sel

This is a type of sea salt - to harvest fleur de sel, you must take the early crystals that start to form across the surface of salt evaporation ponds - this is generally done during the summer months, the time when the sun is strongest. Fleur de sels have a higher mineral content than basic table salt. Fleur de sels can smell like the ocean, and it tends to be grayish in color. Other types of sea salts include sel gris, esprit du sel, and pink, black, and brown sea salts from India.

Rock Salt

As its name implies, rock salt is not fine-grained. In fact, rock salt is unrefined and therefore has a grayish hue. It is sold in large crystals. This is what people use to make ice cream in traditional hand-cranked ice cream makers.

Table Salt : Once of the most widely used salts, table salt goes through a refining process that removes traces of other naturally occurring minerals. Table salt and iodized salt are preferred in baking for their fine-grained texture and accuracy of measure. Iodized Salt : A form of table salt, iodized salt is fortified with iodine that was lost during processing. Kosher Salt : This inexpensive coarse salt is evaporated from a brine. It contains no additives or added iodine. Kosher salt is popular among chefs because its coarse texture makes it easy to pinch up between you fingers and sprinkle onto foods. Measure for measure, 1 teaspoon of kosher salt contains less salt than the same amount of table or iodized salt. Sea Salt : Available in both fine and coarse grains, sea salt has become increasingly available in markets but at a higher cost than table or kosher salt. Sea salt is made from evaporated sea water. This type of salt tends to include several naturally present trace minerals, such as iodine, magnesium, and potassium, which give sea salt a fresher, lighter flavor than standard table salt. Rock Salt : Sold in large crystals, rock salt has a grayish hue because it is unrefined. Rock salt makes a great bed for serving oysters and clams. Or combine it with ice to make ice cream in hand-cranked ice-cream makers.Some advocates for sea salt assert that unrefined sea salt is healthier than refined salts. However, completely raw sea salt is bitter because of magnesium and calcium compounds, and thus is rarely eaten. The refined salt industry cites scientific studies saying that raw sea and rock salts do not contain enough iodine salts to prevent iodine deficiency diseases

Table salt is refined salt, 99% sodium chloride. It usually contains substances that make it free-flowing (anti-caking agents) such as sodium silicoaluminate or magnesium carbonate. It is common practice to put a desiccant [drying substance], such as a few grains of uncooked rice, in salt shakers to absorb extra moisture and help break of clumps when anti-caking agents are not enough.

Medical Significance:

Sodium is one of the major cations present in our body. Almost 95% of it is found in the extracellular spaces. The sodium concentration plays an important part in neuromuscular cell activity. Disturbance of any kind in the body concentration of sodium can lead to serious affections.

Sodium levels falling below 135 mmol/L, result into a condition called hyponatremia. Typically, it manifests as muscular cramps, nausea, vomiting, headache, low blood pressure and fatigue. If unattended, it can lead to confusion, convulsions and stupor state. In severe or rapidly progressing form, it can lead to swelling of the brain, a comatose condition and also can result in death. The cause for getting hyponatremia can be either loss of body fluids rich in sodium, such as in case of diarrhea and vomiting; or excessive accumulation of water within the body. Drugs like antipsychotics, heparin, sodium-free IV fluids, non-steroidal anti-inflammatory drugs and ACE inhibitors can decrease sodium levels.

Hypernatremia, is a condition where sodium levels rise above 146 mmol/L. It is usually as a result of sodium retention coupled with excessive loss of water or inadequate intake of water. Water can be lost in the form of perspiration, through feces & urine, or insensibly through breathing. Rarely, it can result from massive salt intake, such as from drinking seawater or taking excessive sodium supplements. Hypernatremia manifests in the form of increased thirst (to compensate the lost body water), lethargy, weakness, twitching, headache, and irritability. In severe form it can lead to neurological complications in the form of delirium seizures, coma and death. Drugs that can lead to hypernatremia are anabolic steroids, few cough medicines, laxatives, estrogens, and few antibiotics.

Salt has a great commercial value in manufacturing industry, especially in making pulp, paper, setting dyes in textiles or fabrics, and for soaps or detergents. In fact, contrary to our belief, salt is more used in these industries than all of the kitchens around the globe. Many micro-organisms can't withstand a salty environment since osmosis draws water out of their cells. This is the reason why salt is used to preserve food. Medically salt was used as a disinfectant in historic times. Man has used salt as a cleansing agent rubbed on household surfaces. It is also used in many brands of shampoo.

If you are good & honest, you are "the salt of the earth". If something is learnt/taken fast, it "went through like a dose of salts". Cook's Notes:
As eggplant can be bitter, I recommend lightly salting the eggplant cubes and placing them in a strainer or colander for half an hour. The salt draws out any excess liquid, resulting in a milder flavored eggplant.

1 teaspoon Italian Seasoning
1 cup Low Sodium Chicken Broth
1 (10.75 ounces) can Condensed Cream of Mushroom Soup
1/2 cup Half-and-Half
1 cup Cooked Wild Rice

Preparation:

1. Heat the butter and 1 tablespoon of extra virgin olive oil in a large skillet.

2. Stir in the eggplant, and fry until tender, which takes about 5 minutes.

3. Remove the eggplant from the skillet, and keep warm.

4. Add the remaining 2 tablespoons of extra virgin olive oil to the skillet.

5. Stir in the onion and mushrooms and fry until they are tender, which takes about 5 minutes.

6. Return the eggplant to the pan, and season with the minced garlic, salt, pepper, and Italian seasoning.

7. Cook and stir for one minute to blend the flavors.

8. Stir in the chicken broth, and simmer for about 5 minutes, until most of the liquid is reduced or absorbed.

9. Stir in the cream of mushroom soup, half-and-half and the cooked wild rice.

10. Simmer the mixture over low heat for 15 minutes, stirring occasionally.

11. Taste and adjust seasoning with salt and pepper if desired.

While they were once only used sporadically, today, salt water pools are becoming more and more popular for homeowners. However, although many salt water pool manufacturers promote the ease of converting your pool to a salt water system, the pool treatment methods are not any easier than those of a typical pool. Before your convert your system, it is important to understand how it works and why you should (and should not) consider converting.

Salt treatment begins with understanding exactly how salt water pools' chlorination systems work. The basis behind this system is that you do not have to add chlorination for this treatment. However, that does not mean that there is no chlorine. That's actually a common misconception. There are chemicals in a saltwater pool. Treatment is still necessary, and although you do not have to manually add chlorine (in most cases), there is still chlorine in the system. The chlorine, however, comes from the salt itself.

A salt system is not the same as swimming in the ocean. In fact, the water in a pool system is actually still considered fresh water because there is only a very low level of salt in it (there's more salt in your eyes). However, this amount of salt, when put through a control box, can create enough chlorination to keep your pool clean, blue and safe for swimmers.

The control box on a salt water pool treatment system is a device that actually sends electricity through the sale. The longer the electricity runs through the salt, the more chlorinated the water will be. The pool treatment system should automatically control this, but you'll still need to use test strips to test for chemicals often. You can control how chlorinated the water is using the salt control knob. In addition, with the control box, you can tell when you need to add more salt to the system.

Although you will not have to add chlorine as part of your salt water pool treatment program, you will have to continuously check for alkalinity and pH level. It is a good idea to check your water once a week if you use it moderately and even more often if you use it often or get a lot of rain, which can affect the acidity levels. As part of your pool treatment plan, you also need to check the calcium levels in your pool. With too much calcium, your pool water will be "hard" and may leave unsightly build up along the steps and tiles. In addition, excess calcium in your salt water can clog the pump and control box system.

Salt water pool treatment is, for some, a better option than a typical chlorinated pool system. Keep in mind, however, that there are other options as well, and that natural pools are also becoming more popular. Pool treatment is an issue no matter what kind of pool you have, so don't make the mistake of thinking there is no work involved with having a pool.

Hypothyroid Diet

Hypothyroidism (under-active thyroid) can remain undetected for years. People commonly have the symptoms of hypothyroidism even though their blood tests indicate that their thyroid function is 'normal'. This is because standard pathology tests for thyroid function can have difficulty detecting 'sub clinical' cases of hypothyroidism. The most common symptoms of hypothyroidism are chronic tiredness, constipation, feeling the cold and dry skin. If you are in a high risk category for thyroid dysfunction - have a family member with a thyroid condition (especially your mother); are at the menopausal age; have experienced lots of stress in the past two-three years; or have hormonal imbalances - then it's important that you support your thyroid, even if the tests tell that your thyroid is 'normal'. One of the best ways to support thyroid function is with diet.

Certain foods improve hypothyroidism by supplying the essential minerals that the thyroid needs to function and produce hormones.

These include:

1. Tyrosine-rich foods. The amino acid tyrosine combines with iodine to make the hormone thyroxine. These foods include meat, fish, turkey and chicken breast, low fat milk and yogurt, almonds, avocado, bananas, lima beans, pumpkin seeds, sesame seeds, lentils. Supplements of tyrosine should be taken on an empty stomach so that it doesn't have to compete with other amino acids.

2. Iodine-rich foods. Iodine is needed to make thyroid hormones. Ideal food sources include Celtic sea salt, seaweed (sushi, nori rolls), salt water fish and sea food. Iodized salt is available but should be used in small amounts once or twice a week along with a good quality Celtic sea salt. Iodine supplements are usually in the form of kelp tablets. Consult your health practitioner before using these, because the wrong dose can unbalance your thyroid.

3. High quality protein. All of our body's glands and hormones are made from protein. Try to eat high quality lean protein at every meal.

4. Selenium-rich foods - meat, chicken, salmon, tuna, seafood, whole unrefined grains, brazil nuts, brewer's yeast, broccoli, dairy products, garlic, onions and black strap molasses.

5. Supplements of Vitamin B complex and essential fatty acids because they help to balance the entire hormonal system.

6. Sunlight - while not a food, its important to get a daily dose of safe sun. Light stimulates the pineal gland, which in turn positively affects the thyroid as well as all the other endocrine glands.

Certain foods are detrimental for hypothyroidism because they can inhibit the production of thyroid hormones.

1. Soy products. Isoflavones are hormone-like substances found in soy products. High consumption of soy products have been found to suppress thyroid function in some people and can even cause or worsen hypothyroidism. In particular, an isoflavone called genistein, appears to reduce thyroid hormone output by blocking the activity of an enzyme called thyroid peroxidase. This enzyme is responsible for adding iodine onto the thyroid hormones.

How much is too much soy? Each person can tolerate a different amount and unfortunately soy is hidden in many processed and refined foods. If you have a family history of thyroid disease or a diet low in the minerals iodine and selenium, you need to be careful of your soy intake. Reduce your consumption of soy products (soy milk, tofu, tempeh, miso, soy sauce) to a maximum of two or three times per week. If you have already been diagnosed with hypothyroidism, or you display the common symptoms, then reduce your intake to less than twice in a week.

2. Cruciferous vegetables - broccoli, cauliflower, Brussels sprouts, cabbage, mustard, rutabagas, kohlrabi, and turnips. Isothiocyanates are the category of substances in cruciferous vegetables that have been associated with decreased thyroid function. They appear to reduce thyroid function by blocking thyroid peroxidase, and also by disrupting messages that are sent across the membranes of thyroid cells. Cooking these vegetables does make the isothiocyanates less available. Also, because they are so good for us in other ways, only restrict this group if you have been actually diagnosed with hypothyroidism or have strong symptoms.

3. Low progesterone goes hand in hand with low thyroid, so avoid foods that promote oestrogen dominance. This includes any animal product that has not been produced organically (chicken, eggs, dairy, beef, lamb, pork, etc.). All of these foods are available organic.

4. It is believed by some researchers that chlorine and fluoride (found in most tap water) block iodine receptors in the thyroid gland, eventually leading to hypothyroidism.

5. Gluten is linked to thyroid dysfunction (both hyper and hypo thyroid) so if you have any digestive problems or any one in your family with a gluten sensitivity, it would be worth dramatically reducing your gluten intake.

How To Use Salt

Salt is a great flavor enhancer and vitally necessary to our bodies if not taken in excess and I do recommend cooking with less salt than you think will be needed. One can add more to one's plate if wished.

The French generally cook vegetables, soups and pastas in salty water. Cooking it this way helps the flavor of the salt to penetrate the food and greatly improves the taste(but be careful not to add too much). Adding salt to the water in which one is boiling food, raises the cooking temperature and will also give the vegetables much more intense color.

I really recommend cooking with unrefined (gray) salt as it includes other minerals that are also needed by the body. Salt comes in two basic "sizes", fine and coarse. Coarse salt is generally used for adding to water when boiling or adding to certain dishes at the end of the cooking process and fine is used for everything else. I really recommend against buying regular "table salt" or "rock salt" but only purchasing sea salt. Taste the difference for yourself and you'll understand why! Since salt is relatively inexpensive, this luxury is a great investment in terms of improved taste.

I really like to vary the way my dishes are flavored and why I suggest using all the substitutes possible. Examples would be: a raw vegetable salad served with anchovies, freshly ground pepper and olive oil. You could also add a little red wine vinegar or lemon juice to the above dressing. Another example of adding a substitute would be slivers of Parmesan or grated Parmesan over a dish instead of salt. Personally, I like something that is not French at all! This is Thai fish sauce added as a flavoring to a dish. You can buy this in a supermarket or Asian store. This sauce is extremely versatile and can be used in many dishes instead of salt.

When broiling, BBQ-ing or pan frying meat or fish, you can add the salt before or after the cooking. Generally, salt is added before cooking. Personally, I like to cook both ways, depending on what I am doing, where I am and what type of salt I have available to me. If I have a good unrefined salt, for instance, I loved to add the salt (preferably coarse) at the end, sprinkled over a T-bone steak because I like to feel the taste of the salt mixing to the food in my mouth. This is just an example but you can prepare different foods this way, including fish and even vegetables. (A good fish, fried in a skillet and eaten with coarse sea salt and olive oil is a great dish, as long as all the ingredients are fresh and of very high quality!)

Beware of the hidden salt in most prepared foods, like canned goods, sausages, hams etc. and don't then make the mistake of adding too much salt yourself.

Choose a comfortable area to lie down and apply the mixture on your face, neck or back. Avoid broken skin area, rinse with cool water after 20-30 minutes. This method is not as powerful as soaking yourself in the salt water, but it does helps.

You will have a very relaxing feeling with just 20-30 minutes of miracle salt bath. As I mentioned earlier, this step has to be done everyday until your skin condition improved. After I found this cure than remember when I was 8-12 years old, my dad used to bring me to swim in the sea and my skin was flawless. So if possible, go swim in the sea few times a week. Going back to the 3rd century BC to the 2nd century AD, these manuscripts have enabled scholars to reconstruct the history of Palestine and throw a new light on the emergence of Christianity and its relationship with Jewish religious traditions.

Here some interesting facts about Dead Sea scrolls:

Discovered between the years 1947 and 1956 in eleven caves that are situated in the northwest shore of the Dead Sea, these scrolls are fragmented texts that are numbered according to the caves they were found from. The area covers 13 miles east of Jerusalem and is about 1300ft below sea level.
Caves 1 and 11 had intact manuscripts in them and cave 4 produced the largest amount, about 15000 fragments from nearly 500 manuscripts were found.
The Dead Sea scrolls are mostly made of animal skin, copper and papyrus. Written with carbon based ink from right to left there are no punctuations and sometimes they even lack space between words.
Divided into two categories - Biblical and Non-Biblical, the scrolls consist of fragments of the Old Testament except for the book of Esther. One of the issues that arise with desalination is the energy cost. Most plants are powered by fossil fuels, although Russia is currently studying a plant run off nuclear energy. With global warming and energy price concerns on the forefront, many are now looking to renewable energy platforms as an energy source for these plants. Solar energy is one of the options.

Solar desalination plants do not work in the way you might think. Solar energy is not used to provide power to the desalination process, although it probably could be. Instead, the power of the sun is built into the system. The idea is to heat saltwater and turn it into a vapor. The vapor is then run through a condenser system that turns it back into liquid water.

Solar desalination systems work differently, but the idea is to separate the water from salt by using the natural system one finds in the oceans. As you probably know, water evaporates off of the ocean to form clouds in the atmosphere. When the proper conditions occur, these clouds subsequently turn into rain clouds and release the saltless water. Solar desalination tries to mimic the process.

The double concern of rising energy prices and global warming are stimulating research in the renewable energy field. Solar desalination represents just one area where this research is producing tangible benefits.

Cranberry-Orange bread is a delicious quick bread to make for Thanksgiving and Christmas. Cranberries are a healthy seasonal food to add to your holiday menus. They are beneficial for kidney infections and strengthen the blood vessels. I use healthy butter in this recipe and dehydrated cane sugar which still contains its minerals and vitamins instead of processed white sugar.

This recipe makes a delicious treat after the Thanksgiving meal and a great gift for Christmas. Make a few extras to store in the freezer for a quick gift or if you need an extra food to bring to a party.

Cranberry-Orange Bread Recipe

2 cups unbleached flour
¾ cup dehydrated cane sugar
1 ½ teaspoons baking powder
¾ teaspoon sea salt
½ teaspoon baking soda
½ cup butter from pastured cows, softened
1 tablespoon grated orange peel, from organic oranges
¾ cup orange juice
1 egg, from pastured hens
1 cup fresh or frozen cranberries, chopped
½ cup walnuts or pecans, chopped

Step 1: Preheat the oven to 350°. Grease a bread loaf pan with lard.

Step 2: In a bowl, mix the flour, dehydrated cane sugar, baking powder, salt and baking soda. Stir the butter into the mixture until it is crumbly.

Step 3: Stir in the orange peel, orange juice and egg until moistened. Stir in the cranberries and nuts.

Step 4: Spoon the mixture into the bread pan and bake 1 hour and 15 minutes. Insert a wooden toothpick or dull knife in the center to check for doneness. When done, loosen the bread from the sides of the pan and flip over onto a cooling rack. When cooled, cut into slices and store in a covered container.

It is important to prepare your body for a salt water flush by fasting the night before. Do not eat anything after 4:00 PM on the evening prior to your planned flush. Ideally, you will perform the flush when you first awake the morning after your fast.

It is best to do the flush when you are able to remain close to bathroom facilities all day. A weekend or a day off from work or school is ideal.

The salt water flush recipe presented in this article is simple. All that you need to prepare it can be found right in your own kitchen. All that you will need is some purified water, Himalayan or Celtic sea salt and a sauce pan.

1. Over medium heat, warm a quart of purified water in a sauce pan.

2. Add two teaspoons of Himalayan or Celtic sea salt to the water while it is warming. Gently stir the salt into the water so that it dissolves completely.

3. When all of the salt has dissolved, taste the salted water. If it does not have a slightly salty flavor, add a little more salt.

4. Do not overheat the water. Once it has warmed (but is not hot) pour it into a mug.

5. One glass at a time, drink the water quickly. However, you should not chug the water as this may cause vomiting to occur. In total, drink between 2 and 3 glasses of the salted water.

6. After you have finished the water, gently massage your abdomen to help break up the accumulated waste.

7. Diarrhea should develop between 15 minutes and 2 hours after you consume the water.

The water that you drink will not be absorbed into your intestines. It will pass through your colon and expel through your anus. By performing this salt water flush, many goals will be accomplished. You will not only be cleansing your colon but you will also be helping to detoxify your kidneys and liver.

Salt water flushes can purge out Candida and cleanse your system of any parasites that may be present. It is important to keep in mind that on its own, a salt water flush is not a standalone treatment for these ailments. However, it can be an important aspect of treatment and is highly effective.
